Ingredients

large
Onion
finely diced
1
tsp
minced garlic
1
tsp
coconut oil
10
ounce
white button mushrooms
finely diced
1
tsp
dried thyme leaves
1
tsp
dried oregano leaves
1
tbs
sea salt

tbs
tomato paste
4
ounce
shredded spinach
2
cup
cooked quinoa
2
tbsp
ground flax-seed
4
tbsp
parsley
Instructions
Pre-heat oven to 400F.
Saute onion and garlic in the coconut oil, until translucent.
Add mushrooms and seasonings. Continue to saute until liquid has evaporated.
Add tomato paste and cook until absorbed.
Add shredded spinach and continue to cook until wilted.
Add cooked quinoa and ground flax seed, mixing together well.
Season with salt and pepper to taste, then remove from heat.
Once cooled, form mixture into medium sized balls, placing them on baking pan. *Keep hands moist, this will help shape the mushroom balls.
Bake mushroom balls for 20 minutes (oven times may vary).
Enjoy with your favorite marinara sauce and a sprinkle of nutritional yeast!
